Minestrina Semplice con Riso e Erbe
(Perfect for when you come home from work, you want to have soup, and have little time for cooking).
Ingredients for 4/5 people:
1 quart of organic broth, chicken or vegetable.
1/2 cup Arborio rice (you can also use other, but the risotto kind s is best)
2 cups chopped Kale, or other greens of preference.
Thsi is SO EASY! All you have to do is to put the broth,
the greens and the rice to cook in a pot at high heat. As it comes
to boil, lower the heat and let all cook for about 20 minutes.
That's all! I find it delicious, healthy, satisfying and comforting!
You can put the ingredients to cook, go meditating, and voila',
by the time you are done, your soup will be too!
As a second course for this light dinner you could have
sauteed veggies, like sliced zucchini sauteed in ghee (clarified
butter, or EV olive oil and garlic, a little sea salt, and chopped parsley on top.
A very Italian custom is to have a piece of cheese to complete the dinner,
I love the Spanish Manchego, or Pecorino Fresco Italiano.
Of course some fresh bread is always great accompaniment too.
